Garlic Butter Steak & Crispy Potato Skillet
Ingredients (9)
- 12 oz (340 g) top sirloin steak, cut into bite-size pieces
- 14 oz (400 g) baby potatoes
- 1 tbsp olive oil, divided
- 1½ tbsp (21 g) butter
- 3 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt & black pepper

- Boil the potatoes. Cook potatoes in boiling water 10–12 min, until just fork-tender. Drain, let steam dry, then lightly smash. Season with salt, pepper and paprika.
- Crisp the potatoes. Heat half the oil in a large skillet over medium-high heat. Cook potatoes 8–10 min, turning, until deeply golden and crisp. Transfer to a plate.
- Sear the steak. Pat steak dry, season with salt and pepper. Heat remaining oil in the skillet over medium-high heat. Sear steak 3–5 min, turning, until browned.
- Add garlic butter. Lower heat to medium-low. Add butter, garlic and thyme; stir 30 seconds. Return potatoes and toss 1–2 min, until steak reaches 145°F (63°C) inside.
- Rest and serve. Remove from heat, rest 3 min. Sprinkle with parsley and divide between 2 plates.
