Roasted Tomato Burrata Dip With Garlic Bread Crostini
Ingredients (13)
- 500 g cherry tomatoes
- 30 ml olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 pinch red pepper flakes
- 3 cloves garlic, minced (divided)
- 2 tbsp chopped fresh parsley (divided)
- 1 tsp dried oregano
- 250 g burrata or stracciatella
- 5 g fresh basil leaves
- 40 g grated parmesan (divided)
- 1 French baguette
- 50 g soft butter
Steps (6)
- Preheat the oven to 220°C. Toss the tomatoes in a baking dish with the olive oil, salt, pepper, pepper flakes, 2 cloves of garlic, 1 tbsp parsley and the oregano.
- Roast for 20 to 25 minutes, until the tomatoes burst, smashing them with a spoon halfway through.
- Meanwhile, mix the butter with the remaining garlic, parsley, 1 tbsp parmesan and a pinch of salt.
- Slice the baguette, spread each slice with the garlic butter and toast on a tray for 5 to 7 minutes, until golden.
- Top the hot tomatoes with the remaining parmesan, torn basil and the burrata, and stir everything together lightly.
- Serve at once with the garlic crostini.
