Pan Seared Salmon With Garlic Butter
Ingredients (11)
- 2 salmon fillets, skin on (about 150 g each)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp (15 ml) olive oil
- 30 g butter
- 2 cloves garlic, smashed
- 3 sprigs thyme
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 tbsp chopped parsley

- Pat the salmon dry on both sides with paper towels and score the skin lightly.
- Season both sides with the salt, pepper, and paprika.
- Heat the oil in a non-stick pan over medium-high heat until shimmering.
- Place the salmon skin side down and press with a spatula for the first 20 seconds to stop it curling, then cook for 4 to 5 minutes until the skin is crisp.
- Flip the fillets, add the butter, garlic, and thyme, and lower the heat to low.
- Baste the salmon with the melted butter for 2 to 3 minutes until just cooked through.
- Finish with the lemon zest, lemon juice, and parsley and serve.
