Crispy Skin Salmon With Parchment Paper

- 2 skin-on salmon fillets (about 150 g each)
- 1 tbsp oil
- 1/2 tsp salt

- Pat the salmon very dry and season the flesh with salt just before cooking.
- Pour half the oil into a cold stainless steel pan and lay a sheet of parchment paper in it, flat against the oil.
- Place the salmon skin-side down on the parchment and drizzle the remaining oil over the flesh.
- Cook over medium-low heat for 8 to 10 minutes, until the skin is crisp and the fish is cooked about three quarters of the way up the side.
- Spoon the rendered fat over the top of the fillets and cook for 1 more minute.
- Lift the salmon out, discard the parchment, and serve skin-side up.
