Hot Honey BBQ Chicken Mac & Cheese

- 10 oz (280 g) boneless, skinless chicken breast, cubed
- 6 oz (170 g) dry elbow macaroni
- 3/4 cup (180 ml) 2% milk
- 3/4 cup (85 g) freshly grated sharp cheddar
- 2 tbsp BBQ sauce
- 1 tbsp honey
- 1/2–1 tsp hot sauce
- 1 tsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 green onions, thinly sliced
- Salt & black pepper, to taste

- Cook the macaroni. Boil in salted water until just al dente. Drain and set aside.
- Cook the chicken. Season with paprika, garlic powder, salt and pepper. Heat olive oil in a skillet over medium-high heat; cook chicken 6–8 min, turning, until browned and 165°F (74°C) inside.
- Make the glaze. Mix BBQ sauce, honey and hot sauce. Reserve 1 tsp for serving. Add the rest to the chicken; toss over low heat 1 min until coated and sticky.
- Make the mac & cheese. Warm milk in a saucepan over low heat; remove from heat. Stir in cheddar gradually until melted, then fold in macaroni. Transfer to a broiler-safe baking dish and top with chicken.
- Broil and finish. Broil about 6 inches from the heat 2–3 min until bubbling and lightly browned, watching closely. Top with green onion and reserved glaze. Divide into 2 equal portions.
